This was the release party for Green Flash Silva Stout, making its debut under their new Cellar 3 brand. Here’s their event announcement:
We’re giving you a taste of our upcoming Cellar 3 series with a release party in our Tasting Room. Join us from 3pm to 9pm to get the first taste of our barrel-aged favorite Silva Stout, and your chance to take home the first bottles from Cellar 3 (limit 6) before anyone else. For this special night, Green Flash Gastro will be roasting a whole pig and we will have a selection of specialty and rare beers to celebrate including Le Freak Barrique w/Apricot, Candela (Rye Barleywine), Natura Morta w/Boysenberry, Silva Stout on cask and Saison Barrique.

Silva Stout had been an elusive taste for the past few years, and I finally got my hands on some yesterday.
It has always been a small batch release, but on this occasion Silva Stout was the tentpole for the launch of Green Flash’s new Cellar 3 label, or limited reserve collection. A new facility in Poway will open in May, and house all of these specialty barrel-aged creations.
In April 2013 Green Flash Double Stout was brewed, and then barrel aged in oak Heaven Hill bourbon barrels for 18 months, with a 45% fresh blend, and bottled in February 2015. Our Double Stout ages in oak bourbon barrels, and artfully emerges as Silva Stout. This midnight black ale features elegant notes of oak, vanilla, dark chocolate, coffee, roasted barley, and ripe cherry. Round and delicately balanced in the body, each sip envelops the palate with its impressively complex craft composition.
There was a six bottle limit to go, but first I had to grab a pour of Silva Stout, as well as the special Mostra Coffee variation. I was not disappointed in either, and there were several other future Cellar 3 offerings for tasting, like an old favorite – Candela Rye Barleywine.

These were the Cellar 3 reserves I sampled during the event:
- Silva Stout: 4/5
A touch light on the bourbon barreledness for my taste, but still a top-notch stout that lived up to expectations. For the 750mL bottle at $18, it’s kinda hard to say you could go wrong here.
- Silva Stout with Coffee: 4.5/5
Very robust with huge, deep coffee flavor. This might be the most coffee forward stout I have ever tried, and came close to hanging the perfect score on it for that reason.
- Le Freak Barrique with Apricot: 3.5/5
There were two variations of Le Freak Barrique, and I enjoyed this one more. Le Freak was aged in red wine barrels with brett, but in this case apricot was also added. It sweetened the sour.
